Long sunshine days of play, warm nights of camping fun, and a plethora of garden veggies. &nbsp;If you&#8217;re like me you have zucchini coming out your ears and there is only so many loafs of zucchini bread you can make before everyone is completely over it. To help you out here are some wonderful recipes that are super simple, healthy, low calorie, and taste fantastic!&nbsp;<\/p>\n<p>First, you&#8217;ll need a Spiralizer. Slowly add the olive oil while pulsing. Set aside.<\/p>\n<p><i>Kristie&#8217;s<\/i><em>&nbsp;Personal Note: If you are vegan and\/or can&#8217;t have dairy, replace the parmesan cheese with a 1\/3 cup of raw cashews.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p>2. Drain and rinse.<\/li>\n<li class=\"instruction\">Cut the top of the tomatoes. Cut the tomatoes in half and scoop out the seeds with a spoon.<\/li>\n<li class=\"instruction\">Dice the tomatoes. Set aside.<\/li>\n<li class=\"instruction\">In a food processor, chop finely garlic, red onion and herbs. Add sun-dried tomatoes, olive oil, maple syrup or agave, apple cider vinegar and chop in pulses. Leave some texture.<\/li>\n<li class=\"instruction\">In a bowl, fold together sun-dried tomato mixture with diced tomatoes. Season with salt and cayenne.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>3. Last is my personal favorite. Make any salad hearty by adding spiralized noodles! Turning a salad into a meal is easy.&nbsp;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-3760\" src=\"http:\/\/thebellyfitclub.com\/wordpress\/wp-content\/uploads\/2016\/08\/untitled-9482-1024x683.jpg\" alt=\"untitled-9482\" width=\"960\" height=\"640\" srcset=\"http:\/\/thebellyfitclub.com\/wordpress\/wp-content\/uploads\/2016\/08\/untitled-9482-1024x683.jpg 1024w, http:\/\/thebellyfitclub.com\/wordpress\/wp-content\/uploads\/2016\/08\/untitled-9482-300x200.jpg 300w, http:\/\/thebellyfitclub.com\/wordpress\/wp-content\/uploads\/2016\/08\/untitled-9482-768x512.jpg 768w, http:\/\/thebellyfitclub.com\/wordpress\/wp-content\/uploads\/2016\/08\/untitled-9482-272x182.jpg 272w\" sizes=\"(max-width: 960px) 100vw, 960px\" \/><\/p>\n<p class=\"ERSInstructions\">In a large bowl:<\/p>\n<p style=\"text-align: left;\">3-4 handfuls Greens<\/p>\n<p style=\"text-align: left;\">1 Sliced tomatoe<\/p>\n<p class=\"ERSInstructions\" style=\"text-align: left;\">1 avocado<\/p>\n<p class=\"ERSInstructions\" style=\"text-align: left;\">1\/4 cup Sliced Red Onion<\/p>\n<p>2 baby cucumbers, sliced<\/p>\n<p>1 large or 2 medium zucchinis, spiralized.<\/p>\n<p>Dressing:<\/p>\n<p>equal parts-<\/p>\n<p>Liquid aminos<\/p>\n<p>olive oil<\/p>\n<p>apple cider vinegar OR fresh lemon juice.<\/p>\n<p>Mix together and pour over the noodles.<\/p>\n<p>Toss and enjoy!<\/p>\n<p>As always, keep it simple and have fun. \ud83d\ude42&nbsp;<\/p>\n<p>~Kristie<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Summer!
